Chocolate-Dipped Blueberry Smoothie Popsicles

These blueberry smoothie popsicles are creamy, lightly sweet, and easy to prepare ahead of time.

Ingredients

  • 2 cups frozen blueberries

  • 1 cup plain Greek yogurt

  • ½ cup unsweetened almond milk

  • 2 to 3 tablespoons honey

  • ½ teaspoon vanilla extract, optional

Optional topping

  • Melted dark chocolate

  • Unsweetened shredded coconut

Instructions

  1. Blend the blueberries, yogurt, almond milk, honey, and vanilla until smooth.

  2. Taste and add more honey if needed.

  3. Pour the mixture into popsicle molds.

  4. Insert the sticks and freeze for at least 6 hours or overnight.

  5. Run the outside of the mold briefly under warm water to release the popsicles.

  6. If desired, dip the frozen popsicles in melted chocolate and immediately sprinkle with coconut.
