Healthy Marshmallow Recipe (Minimal Ingredients, No junk!)
I love marshmallows, but I don’t love dextrose, tapioca solids, and all the other junk they put in the marshmallows you get at the grocery store. Marshmallows are supposed to be healthy, but when you make them right, They’re made from gelatin, which helps protect against leaky gut.

Ingredients:
— 3 tbsp gelatin
— 1/2 + 1/4 cup cold water
— 1/2 cup pure maple syrup
— 1/8 tsp sea salt
— 1 tsp vanilla extract
Directions:
1. Bloom gelatin: sprinkle 3 tablespoons of gelatin over 1/2 cup cold water in a mixing bowl and let it sit for 5-10 minutes.
2. Heat syrup: in a saucepan, heat 1/4 cup water and 1/2 cup maple syrup (plus a pinch of salt, optional) over medium heat until it reaches 240°F (8-10 minutes).
3. Whip mixture: Slowly pour the hot syrup into the gelatin, then whip with a mixer on low, increasing to high, for 10-15 minutes until fluffy and doubled in volume. Add 1 teaspoon vanilla extract in the last minute.
4. Set marshmallows: Pour into a greased 8x8-inch pan, smooth the top, and refrigerate for 6-8 hours or overnight.
5. Cut and store: Cut into squares and store in an airtight container for up to 1 week.
