One Pan Mediterranean Chicken Dish
One of the biggest hurdles for more people to start cooking healthy meals at home is that they’re too busy, don’t have the time, or that it’s too expensive.
I love coming up with budget-friendly recipes that are as effortless and easy as possible… while also optimizing the dish for maximum nutrient density.
This One Pan Chicken Dish does just that.
It takes less than 10 minutes of prep time and about an hour to cook.
You can fill that hour with productive time or to run some quick errands as long as there’s someone at home to keep an eye on it.
Feeds: 2-3 people
Costs: less than 15 dollars total.
You’ll need:
1 package of chicken drumsticks
Note: you can use chicken breast or chicken thighs. I like drumsticks because they are less expensive than chicken breasts and also an amazing source of vitamin K2.
1 bunch of carrots
1 carton of chicken stock (I like Costco’s organic chicken stock or Pacific foods)
1/2 onion
1 lemon
2 cups cherry tomatoes (whole)
1/2 tbsp rosemary (2 sprigs fresh)
1/2 tbsp thyme (4-5 sprigs fresh)
Salt
Pepper
Instructions:
Preheat oven to 450. Remove the drumsticks from the package, and place them in the center of a glass dish.
Peel carrots and onion, chop them into large chunks, and place them on the perimeter of the glass dish with cherry tomatoes.
Pour a full carton of chicken stock into the dish or until the ingredients are well-submerged.
Squeeze the juice of 1/2 a lemon on top and place it in the dish for extra flavor.
Sprinkle rosemary, thyme, salt, and pepper on top.
Cook in the oven for about an hour or until the drumsticks are golden brown.
